Ingredients

For the potato salad

500g potatoes, peeled (russet or similar)

1 cucumber, deseeded and finely sliced on mandolin

1 carrot, peeled and sliced into rounds on mandolin

90g mayo

10g wasabi paste

10ml rice vinegar

half red onion, very thinly sliced

2 hard boiled eggs

2 x 150g salmon fillets, cut into thin long strips

oil to fry

200ml soy

zest and juice 1 lime

1 tsp chilli flakes

25mm piece ginger in matchsticks

garnish with chopped spring onions and sesame seeds

method

Potato salad – boil the potatoes until cooked, drain. Cool

Mash with a fork, so there not really smooth

Salt the cucumber for 10mins, drain off any liquid

Mix the mayo, wasabi, vinegar etc

Add everything to the potatoes

Salmon – oil the fish and place in a very hot pan

Cook literally for 10-20 secs

Add the soy etc

Take off the heat. Leave 2 - 3 minutes

Serve with the salad and garnishes
