Ingredients
1 cucumber, peeled, deseeded and cut into half moons
Half watermelon, cut into 30mm cubes
200g strawberries
200g feta
50g green olives
Handful rocket
3 finely chopped spring onions
Handful chopped mint
50g pistachios
2 plum tomatoes
50ml sherry vinegar
175ml olive oil
30ml honey
Serve with toasted slices of baguette
Method
1. Dressing – blend half the strawberries with the vinegar, honey and oil. Season well
2. Toss everything together, season and add some dressing
3. Serve with the bread
