2 x 200g blocks feta

approx. 12 vine leaves

juice and zest 1 lemons

2 cloves very thinly sliced garlic

15g chili flakes

6 sprigs thyme

50ml extra virgin olive oil

For the sauce

65ml red wine vinegar

5g salt

2 garlic cloves

half finely diced shallot

1 red chilli, chopped

50g chopped coriander (including stem)

25g chopped parsley

10g chopped oregano

100ml extra virgin olive oil

juice 1 lemon


1. Make 2 x sheets of vine leaves

2. Sit the feta in the middle of each and arrange everything on top (finishing with oil and juice) try not to let it ooze over the sides

3. Wrap up to make a neat tight parcel

4. Bake at 200°c for 20 minutes

5. To make the sauce, simply chop and mix together

6. Serve feta with sauce and pitta or flat bread
