500g chopped strawberries

150g sugar

15ml rose water

zest 1 orange

For the cake

110g butter

3 eggs

225g sour cream

225g flour

200g sugar

10g baking powder

pinch salt

3g bicarb


1. Cook the fruit, sugar, rose water, orange for 8 minutes, cool, then spoon into a greased, lined 22cm cake tin

2. Beat the butter and sugar, add eggs, then sour cream

3. In a separate bowl mix the dry ingredients, and when combined, mix in the wet ingredients

4. Arrange the strawberries in the base of the cake tim, then spoon the mixture on top

5. Bake at 160°C for about an hour

6. Cool a little, turn out, fruit side up, serve with cream
