125ml oil

150g dried mixed fruit – mango, papaya, pineapple. Finely chopped

zest and juice 1 lime

125g Greek yoghurt

175g caster sugar

2 eggs

1 tsp vanilla bean paste

175g flour

1 1/2tsp baking powder


150g butter

50g caster sugar

1 tsp vanilla bean paste

300g full fat cream cheese

zest 1 lime

Serve with a nice cup of tea


1. Mix everything except the flour and baking powder together

2. Fold in the flour and baking powder

3. Spoon into a greased lined 900g/ 2 lbs loaf tin

4. Bake at 180c for approx. 50 minutes, cool

5. Topping – beat the butter, sugar and vanilla for 5 minutes with an electric whisk

6. Add the cream cheese and beat again. Fold in half the zest

7. Spread on the cake, top with rest of the zest
