50ml Foursquare Criterion Rum - Available from The Whisky Exchange

10ml madeira syrup

5 dashes of angostura orange bitters

Served cold - Stir all ingredients with a large block of ice until cold. Pour into a rocks glass over 1 large ice cube or ice ball

Served Warm - Stir all of the ingredients without ice. Pour into a warm brandy balloon. Garnish with dehydrated pineapple smothered in chocolate.

50ml Angostura 7 Year Old Rum - Available from The Drink Shop

10ml orange liqueur

200ml Fever Tree spiced orange

3 dashes of chocolate bitters

Build all ingredients into a highball glass. Add plenty of ice. Garnish with a twist of orange.

50ml Plantation OFTD Rum - Available from Masters of Malt

10ml JD Taylor Velvet Falernum

5ml orgeat syrup

5ml pineapple re'al syrup

25ml fresh lime juice

25ml pineapple juice

Shake all the ingredients with plenty of ice. Pour into a tiki mug. Sprinkle a dusting of nutmeg for aroma.
