Ingredients (serves 4)

300g chicken mince

75g red thai curry paste

30ml fish sauce

5g sugar

3 lime leaves - shredded

20g chopped coriander

1 egg

10 fine green beans – finely chopped

25g sesame seeds

1 stalk lemongrass very finely chopped


75ml light soy

100g mayo

juice & zest 1 lime

1 finely chopped red chilli

chopped coriander


1. Mix all the meatball ingredients together in a bowl, mould into 40mm balls. Chill at least 40 minutes

2. Shallow fry on medium heat for about 8-10 minutes until cooked through (you can finish through a 200C oven to cook through)

3. Sauce – mix it all together

4. Serve meatballs with sauce and more limes
