Ingredients

4 x salmon fillets

butter for basting the salmon

marinade

100ml yoghurt

juice 1 lime

2 cloves garlic

25mm piece ginger, grated

2 tbsp ground coriander

1 tbsp ground cumin

1 tsp ground garam masala

1 tbsp paprika

salt

Salad

1 naan bread, torn into chunks

1 mango, diced

1 cucumber, cut into half moons

handful rocket

half red onion, very thinly sliced

100g salted cashews

30g chopped mint and coriander

Dressing

bunch mint leaves

200g yoghurt

30g mango chutney

zest and juice 1 lime

35ml white wine vinegar

Method

1. Marinade – mix it all together, add the salmon, cover and chill over night

2. Then grill the salmon for approx. 8-10 minutes (baste with melted butter as it grills)

3. Dressing – blend the mint, vinegar, mango and lime, then beat in the yoghurt by hand

4. Toss the salad ingredients in a little oil and season

5. Now sit the salad on a platter, spoon on dressing then sit salmon on top
