Ingredients

Base

140g flour

30g sugar

40g rolled oats

1 tsp cinnamon

100g melted vegan marge

30ml maple syrup

Filling

700g silken extra firm tofu (It has to be this exact description)

1 tbs vanilla paste

juice ¼ lemon (15ml)

225ml apple juice (cloudy pressed)

90g sugar

tbs agar agar flakes

Topping

225g strawberry jam, add a little water to loosen

175g chopped strawberries

1 tsp rose water

pulp from 2 passion fruit

approx. 100ml water

method

1. Base – mix the dry ingredients, add the wet, then press into a 7” spring form (the size is crucial)

2. Bake at 180c for 20 minutes, cool completely

3. Top – boil the apple juice, sugar and agar for 5mins

4. Blend the tofu until smooth, then add the apple mix, lemon and vanilla

5. Spoon/pour onto the base. Chill overnight

6. Topping – put all in a bowl and whisk together.

7. Take off heat, cool 5 minutes, add the rest

8. Spoon onto the top of the cheesecake, serve with more fruit. Eat immediately
