Ingredients

500g cooked peas

2 cucumbers, deseeded and chopped

50g chopped mint

50g finely chopped flat leaf parsley

3 finely chopped spring onions

zest of 1 lemon

For the dressing

60ml extra virgin olive oil

juice of 1 lemon

clove grated garlic

5g chilli flakes

4 x lemon sole fillets

50g butter

juice of 1 lemon

1 carrot finely julienned

1 red pepper finely julienned

4 mange tout finely julienned

Method

1. First make the salad. Pulse the peas in a food processor to beak down a little.

2. Now mix with the rest of the salad ingredients.

3. Whisk all the dressing ingredients together and pour over the salad.

4. Lay each lemon sole fillet skin side down on a board and season.

5. Take pieces of each of the veg and lay them in the center. Squeeze over lemon.

6. Roll up and secure with cocktail sticks.

7. Place on a buttered saucer in a steamer.

8. Add some butter and more lemon juice.

9. Steam for approximately 5 minutes until just cooked

10. Serve with the pea salad.
