1kg sea bass, salmon and cod (combined) cut into big chunks

1 red and 1 green pepper

1.5kg tomatoes

1 onion, sliced

4 cloves garlic

2 birds eye chillies

tbs smoked paprika

10g cumin

5g cinnamon

10g sugar

200g sour cream

75g harissa paste

serve with lemons and flatbread


1. Roast the peppers til blackened. Put in a bag, when cool, peel and cut into strips

2. Fry the onion and garlic for 10mins

3. Puree the tomatoes, pass through a sieve and add to the pan

4. Add the chillies and spices. Bring to the boil, then simmer for 10mins

5. (add a little water if too thick)

6. add the fish and peppers, cook 6-8 mins

7. mix the sour cream and harissa

8. serve with the sour cream and lemons
