4 bananas, firm

100g self raising flour

25g cornflour

30g melted butter

35g sugar

150g ice cold fizzy water

1 tsp 5 spice

pinch cayenne

honey (to drizzle)

sesame seeds (to sprinkle on fritters)

Ginger cheesecake dip

100g cream cheese

75g Greek yoghurt

50g finely chopped preserved ginger in syrup and a little of the syrup

50g honey


1. Mix the flours and spices with half the water, stir in the butter

2. Add the sugar, then the rest of the water

3. Cut the bananas in half lengthways, then into 3 (6 pieces per banana unless small then do 4)

4. Deep fry at 170C for about 3-4 minutes, drain and drizzle with honey and sesame seeds.

5. Dip – mix the cheese and yoghurt together, fold in the ginger, drizzle on honey

6. Serve with the fritters
