SOUR 1

Yuzu Whiskey Sour

25ml black sesame infused Bulleit Bourbon (infuse 100ml of bourbon for 2 hours with ½ tsp black sesame seeds)

20ml Choya Yuzu Liqueur

20ml lemon juice

10ml agave ‘syrup’ (stir equal parts agave syrup and boiling water until combined)

1 Egg White or 25ml Aquafaba.

Shake all ingredients with ice.

Pour into an ice filled glass.

SOUR 2

L’Heure Bleu / Violet Crawley

50ml Tanqueray Gin

10ml simple syrup (1:1)

10ml orgeat

5ml crème de violette

25ml lemon juice

10ml rhubarb tea - rhubarb tea bag infused with cup of boiling water for five minutes. Then chill the tea down for an hour before using

1 Egg White or 25ml Aquafaba.

Shake all ingredients with ice.

Pour into an ice filled glass.

SOUR 3

Mexinese

50ml Don Julio Blanco Tequila

25ml lime juice

30ml simple syrup

5ml cider vinegar

Tsp fresh ginger juice

1 Tbsp pandan, liquorice and ginkgo tea: Pandan leaf and liquorice and ginkgo teabag infused with cup of boiling water for ten minutes. Chill in the fridge for an hour.

1 Egg White or 25ml Aquafaba.

Shake all ingredients with ice.

Pour into an ice filled glass.
