Ingredients

12 x soft shell crab, defrosted and patted dry

Flour mix – 200g flour

1 tbs each of smoked paprika, cayenne, garlic powder, celery salt,

1 tsp turmeric

Oil to deep fry

ΒΌ watermelon, cut into triangles about 75mm each side

1 cucumber, cut into half moons, seeds removed

Lots of chopped mint

Pickle – 200ml cider vinegar

200ml water

200g sugar

1 tbs chilli flakes

Tbs salt

12 coriander seeds

Method

1. Pickle – boil the vinegar water etc for 5mins. Cool completely

2. Add the watermelon and cucumber. Chill for at least 30mins

3. Mix all the flour ingredients, add the crab

4. Dust off excess and deep fry at 180c for approx. 4mins. Drain and season

5. Serve crab on top of pickle with fresh mint and sesame seeds
