750g plum tomatoes


1 finely sliced red chilli

half red onion, very thinly sliced

juice and zest 2 limes

1 tbs capers

7g sea salt

pinch sugar

approx. 110ml good quality extra virgin olive oil

2 x smoked mackerel fillets, warmed

half a ciabatta, torn into bite-sized pieces

few mint and coriander leaves to garnish


1. For the tomatoes, chopped into 6 pieces each.

2. Salad – simply mix everything including the tomatoes but except the olive oil together. Leave for 1hour to maserate.

3. Add the oil, mix gently. Leave 20 minutes before serving

4. When ready to serve flake big chunks of mackerel and pieces of bread into the salad, mix gently and serve
