Ingredients
2 cooked smoked duck breasts, thinly sliced
2 cucumbers
15g sea salt
10ml black rice vinegar
30ml chilli oil
clove crushed garlic
10g crushed, toasted Sichuan peppercorns
10g sugar
30ml light soy
1 avocado, cut into chunks
Method
1. Cut the cucumbers in half lengthways, then into about 6 large pieces, put in a bowl
2. Now add the dressing ingredients. Toss and leave for 10 minutes
3. Add the avocado and sliced duck
4. Garnish with spring onions and coriander, serve
