4 x 150g sea bass fillets

oil and butter and lemon to fry

100g brown crab meat

100g mayo

juice half lemon

salt & pepper

1 avocado, cubed

4 radish, sliced

half cucumber diced

handful watercress

For the dressing

100ml olive oil mixed with juice of half lemon and 1 tbsp. sugar


1. Oil the fish, fry 3-4 minutes skin side down until crispy

2. Flip over, cook for 1 minute, baste with butter and lemon, drain.

3. Mix the mayo with the salt, pepper, lemon juice, crab meat

4. Toss the vegetables in the lemon dressing

5. Spoon some mayo onto each plate, put salad on top and sea bass at the side
