8-10 scallops, cut into slices

For the marinade:

30g ginger

Clove garlic

Juice and zest of 2 limes

1 tsp sea salt

400ml coconut milk

Tsp chilli flakes

1 green chilli thinly sliced

Handful mint and coriander

250g small cubed sweet potato, roasted

Half red onion very thinly sliced


1. Blend all of the marinade ingredients until smooth, leave to mature for 20mins in a fridge.

2. Then sieve, add the scallops to the liquid and leave for 10-15mins max

3. Add the rest of the ingredients, mix gently and serve on flat plates.
