Makes 12



1 finely chopped onion

1 tbsp smoked paprika

1 tsp ground coriander

125ml red wine

400g tin chopped tomatoes

20ml fish sauce

125ml vegetable stock

Fish cakes

bunch parsley

Bunch coriander

Bunch chives

1 egg

1 chopped onion

4 cloves garlic

100g / 150g breadcrumbs

600g salmon, cut into 10mm cubes

Garnish with lots of herbs


1. Sauce – fry the onion for 8 minutes

2. Add everything else, bring to the boil

3. Then simmer 25 minutes

4. Fish cakes – blend the onion, herbs, garlic and breadcrumbs

5. Add the cubed fish. Shape into fish cakes (about 12)

6. Fry them for about 3 minutes each side

7. Serve covered in sauce and lots of herbs
