Lump of good butter

2 slices of brioche

Good cream cheese - 3 tbsp

1/ 2 zest

Drop of vanilla

1tsp of cinnamon

Drizzle of honey

10 + raspberries


1.Butter both slices of brioche and turn them over.

2.In a bowl, combine the cream cheese, lemon zest, vanilla, cinnamon and honey, then spread the mixture over one slice of brioche.

3.Scatter over the raspberries and place the other slice of brioche on top, butter side up.

4.Heat a frying pan over a low heat, add the sandwich and cook for 3–4 minutes each side until golden and crisp.
