Ingredients
30g salted popcorn
75g panko breadcrumbs
5g smoked paprika
2 x chicken breasts cut into bite-size pieces (7 pieces per breast)
50g flour
2 beaten eggs
125g sour cream
125g mayo
50g salad cream
150g blue cheese
2 cloves garlic
1 tsp chilli flakes
1 tsp smoked paprika
1 tsp hot sauce
Method
1. Chicken – pulse the popcorn, breadcrumbs and paprika to form a crumb.
2. Dip the pieces of chicken in flour, egg, then the popcorn crumb. Deep fry 5 minutes, drain on some kitchen towel.
3. For the spicy dip - Blend everything except 75g of cheese
4. Then crumble in remaining cheese and serve with the chicken
