Ingredients (serves 4)
3 x 320g pack of ready rolled puff pastry
egg wash
3 dark plums, peeled and sliced
125g full fat cream cheese
1 tbsp soft light brown sugar
12 blackberries
Sauce
200g golden caster sugar
150ml water
100ml any dark/purple berry liqueur
Method
1. Cut the pastry into 6” circles
2. Gently mix the plumbs and cheese, then divide between the circles. (just on one half) Sprinkle on the sugar and dot on the blackberries
3. Fold over, brush with egg wash, crimp and bake at 180C for 25-30 mins, or until golden brown.
4. Sauce, lob it all in a pan and boil until syrupy
5. Serve with a dollop of ice cream too
