1kg peeled pears, cut into chunks

30g butter

100g maple

50g stem ginger in syrup, chopped


150g plain flour

1.5 heaped tsp baking powder

150g butter

130g golden caster sugar

3 eggs

tsp ground ginger

pinch ground cinnamon

serve with good quality vanilla ice cream


1. Boil the maple and butter for 2-3 minutes. Add the pears, simmer for 4 minutes. Add the chopped ginger

2. Spoon into a 1.5ltr baking dish (soufflé style)

3. Topping – beat the butter and sugar until the sugar is mixed in well, then add the eggs and mix it all together.

4. Then fold in the dry ingredients

5. Spoon on to the top of the fruit

6. Bake at 180C for approx. 30-35 minutes

7. Serve with ice cream
