Serves 4


4 x peaches, cut into chunks

200g honey

30ml amaretto

25g butter

zest half orange

100g crushed amaretti biscuits

For the fool:

500ml whipped cream

1 vanilla pod

300g thick Greek yoghurt


1. Boil the honey, amaretto and butter for 3-4minutes

2. Add the peaches, turn down the heat, cook for 10 minutes or until they have softened

3. Take off heat add the orange zest, cool

For the fool:

4. Mix all of the fool ingredients together

5. Add half the cooled fruit and half the biscuit mix to the fool

6. Divide the remaining fruit between 4 bowls/glasses, add the fool, top with more biscuits
