250g butter

300g chocolate

30g cocoa powder

125ml milk

6 eggs

225g sugar

75g dark brown sugar

150g flour


350g sugar

75g dark soft brown sugar

100g cocoa powder

30g flour

400ml evaporated milk

250ml water

30g butter

1 tsp vanilla paste


1. Melt the choc and butter over simmering water. Cool slightly

2. Whisk the eggs and both sugars for a full 10 minutes – NO CHEATING

3. Fold in the choc mix, then the flour

4. Spoon into a greased lined 22cm springform

5. Bake at 160C for 1 hr 10

6. Cool completely

7. Sauce – simply put everything in a pan, mix well. Bring slowly to the boil

8. Simmer for 5 minutes

9. Serve a big slab of cake with sauce and whipped cream
