MAX’S BLT
MAKES 2
1 beef tomato, sliced into 1cm horizontal slices
2 lettuce steaks (thick lettuce slices)
½ tsp salt
½ tsp sugar
8 rashers of streaky bacon
3 tbsp mayonnaise
2 ciabatta rolls
Method
1. Lay the tomatoes on to a plate and sprinkle with the salt and sugar. Leave for 10 minutes so the liquid from the tomatoes starts to come out.
2. Pour this extra water over the lettuce steaks.
3. Cook the bacon in a frying pan in til brown and crispy.
4. Pour the bacon fat from the pan into the mayonnaise and mix until all combined.
5. Spread the mayonnaise on to both sides of the roll, add the bacon, top with the tomatoes, lettuce and add the rolls lid.
6. Eat!
MAX’S MEATBALL SUB
Ingredients (Serves 2)
Leftover meatballs in marinara sauce (Around 10 meatballs)
Two small bagettes
Mozzarella ball
Grated mozzarella 100g
American mustard
Tin foil
Method
1. Get a Baguette - cut in half but not all the way through
2. Smear leftover tomato sauce all over inside
3. Crush up leftover meatballs and line the baguette
4. Cover in slices of mozzarella cheese
5. And grated mozzarella
6. Drizzle with American mustard
7. Wrap in tinfoil and put the whole lot in oven at 180C until whole sandwich is hot through.
MAX’S MADRID SQUID SANDWICH
Ingredients (Serves 2)
Milk 300ml
Breadcrumbs (enough to coat a tray)
Pinch salt
Seasoned flour (pinch of salt)
Egg wash (3 eggs and a splash of milk)
Mashed potato powder (a sachet)
Squid rings (fresh or frozen)
Mayonnaise 3 tbsp
Garlic cloves x2
For the Morunos sauce
sweet smoked paprika 1 tsp
cumin 1 tsp
garlic clove crushed
olive oil 50ml
poshest white wine vinegar you have 1 tsp
Lemon juice
Method
1. Soak the squid in milk for 15 mins, put into seasoned flour and then dip in the egg wash. Cover in 50-50 breadcrumbs and mash potato powder mix
2. Deep fry rings until golden and crunchy
3. Make the garlic mayonnaise –A clove of garlic mushed into a puree with salt. Mix this into the mayonnaise
4. Morunos - sweet smoked paprika, cumin, garlic, online oil and poshest white wine vinegar mixed all together in a bowl.
5. Assemble - cut bread in half not all way though
6. Hollow out soft bread, leave basically a canoe of a baguette.
7. Slather with garlic mayo, deep fried squid and drizzle morunos and a squeeze of lemon.
