4 x mackerel fillets

oil to fry

2 cucumbers cut into deseeded half moons

1 tsp chilli flakes

30g seaweed

10g snipped chives

1 tsp sesame seeds


20g Dijon mustard

juice and zest 1 lemon

80ml extra virgin olive oil

20ml seaweed oil


1. Oil the fish, season and fry for 3 minutes skin side down, then flip over and cook 1 minute more

2. Dressing – whisk the mustard and oil together, add the olive oil

3. Toss the cucumber etc in the dressing

4. Serve with the fish and drizzle over the seaweed oil
