Ingredients

200g sugar

125g butter

2 eggs

zest and juice 1 lemon

200g plain flour

5g baking powder

125ml milk

50g toasted desiccated coconut

15g poppy seeds

For the drizzle

150g icing sugar

juice of 1 lemon

serve with soft fruits and greek yoghurt

Method

1. Beat the butter and sugar until light and fluffy

2. Add the eggs, then lemon

3. Add half the milk, then half the flour then alternate folding in the remaining milk and flour

4. Finally add poppy seeds and coconut

5. Spoon into a lined loaf tin and bake at 180°C for approximately 1 hour

6. Cool

7. Gradually add the lemon to the icing sugar until it reaches a pouring consistency. spoon over cake, serve
