Sauce –

1 tbsp of oil and 1 tbsp of butter to fry

1 finely diced red onion

2 finely chopped birds eye chillies

1 finely diced red and 1 green pepper

100g sweetcorn (from a tin drained)

6 chopped tomatoes. Seeds and all


3 eggs

4 soft corn tortillas

topping – 1 crushed avo

juice n zest 1 lime

100ml sour cream

garnish with sunflower seeds, coriander and lime wedges


1. Fry the onions etc for 20-25 mins in a frying pan or sautee pan (needs to have a lid)

2. Make holes in the mix and crack an egg in each hole, season and cover

3. Cook til the eggs are just done (3-4mins)

4. Mix the avo with lime etc

5. When done spoon on the avo, top with seeds and herbs

6. Serve out of the pan
