35ml Ramsbury Vodka - Available Here

20ml St Germain

100ml Fever Tree tonic

10ml freshly squeezed lime juice

1 fennel tea bag

Method: Heat the tonic separately in a pan or on a coffee machine steam wand. Add all other ingredients to a tea pot and pour in tonic, leave to brew for 30 seconds, pour in to a tea cup and garnish with a lime zest spiral.

50ml Porters Perfection Vodka by Liberty Fields - Available from Masters a Malt

25ml Verjus

50ml cloudy apple juice

20ml meadowsweet syrup

5ml Creme de Mure

3 dashes Angostura bitters

Method: heat all ingredients with a coffee steam wand to heat up and slightly aerate the drink (if you don't have a coffee machine and wand, heating over a pan will do). Float a Star Anise on top to garnish

60 ml chamomile tea (strong tea)

20 ml lemon sherbet

10 ml heather honey

10 ml yellow chartreuse

Method: Heat all ingredients in a pan - serve in a old school tea cup with grated nutmeg.
