BERRY CHRISTMAS SOUR

50ml Bimber Distillery London Rum

10ml Black cherry Re'al infused syrup

10ml Raspberry Re'al puree

25ml Lemon Juice

20ml Egg White

Shake all the ingredients in a shaker with ice until cold. Double strain into a sour glass or small martini glass.

COLE FIRE FLIP

50ml Cole Distillery’s Rum

1 Egg Yolk

20ml Pumpkin infused syrup

20ml Cream

Garnish. Dusting of Nutmeg

Shake all the ingredients in a shaker and double strain into a sherry glass or coupette. Garnish with nutmeg.

YE OLD CHESTERFIELD

50ml Greensands Rum (infused with Raisins, sultanas, Cherries)

2 barspoons soft Demerara Sugar

a dash of Vanilla essence

a smoking Cinnamon stick

3 dashes Black Walnut bitters

Twist of lemon peel

Add sugar to the a mixing glass, with vanilla essence, bitters and infused rum. Stir with ice and serve in a rocks glass with a block of ice. Garnish with a twist of lemon peel and smoked cinnamon.
