1 x kg small carrots or normal carrots cut in half lengthways

150g harissa paste

50ml olive oil

3 cloves chopped garlic

25g demerara sugar

50g butter

75g flaked almonds, toasted

50g golden raisins

Handful parsley

Few sprigs tarragon


1. Heat some oil in a roasting tray

2. Add the carrots, let them sit for 3mins, don’t shake

3. Now add everything except the butter

4. Roast at 200c for 30mins

5. Take out of the oven

6. Add the almonds, raisins, butter etc

7. Stir well and serve
