Granola topping –

200g rolled oats - roasted

50g chopped hazelnuts

25g chopped pecans

25g golden raisins

50g desiccated coconut

15g dried cherries

125ml maple syrup

50g melted flora

150g crunchy peanut butter

200ml vegan coconut yoghurt

150g ripe strawberries

100g blueberries

2 chopped ripe nectarines

Maple and fresh mint to garnish


1. granola – mix it all together, add the maple and margarine, mix well and then lay out on a greased baking sheet and bake at 180c for 20 mins. But halfway through, give it a mix.

2. mix the Peanut Butter and yoghurt.

3. Crush half the fruit, add to the PB mix.

4. Serve granola, topped with yoghurt mix and sliced fruit ( add more maple and fresh mint to garnish).
