150g cooked puy lentils

450g blanched green beans (don’t trim)

6 sliced radish

handful chopped parsley, mint and a few rocket leaves

half very thinly sliced red onion

olive oil to fry

For The Dressing

50g tahini

clove garlic

juice and zest 1 lemon

150ml extra virgin olive oil

25g hot sauce (Cayenne Pepper Based)


1. Dressing – whisk it all together (you may need a little warm water to get the right consistency)

2. Heat the oil in a pan until smoking, add the beans and let them sit for 3 minutes to char – toss, repeat remove

3. Gently mix the ingredients together, dress with a little dressing, serve on a platter with warm wholemeal pitta and more dressing.
