Nuvola Spritz

For the drink:

50ml Aperol

20ml Sparkling water

30ml Prosecco

15ml cold brew coffee

For the foam:

50ml Vodka infused with lemon and orange

50ml Grand Marnier infused with pink peppercorns, cinnamon and cardamom

8 grams of sucro powder. Mix together and use an air stone/ chefs foam kit to create the foam

Method: Add ice to a large wine glass and add the ingredients and stir. Top with Nuvola foam. Serve with honey roasted mixed nuts

Cafe Negroni

20ml Coffee infused red vermouth

20ml Tanqueray Sevilla

20ml Campari

Method: Add cubed ice to a rock glass, add the ingredients and stir. Garnish with a slice of orange zest and serve with dark chocolate orange and sea salt

Spiced Nitro Martini

35ml Kettle One vodka

40ml Cold brew coffee

20ml water

15ml Creme de Mure

5ml Pimento Dram

5ml Sugar syrup

Method: Pre batch by mixing all the ingredients together and chilling. Add to the keg and charge with nitrogen. If you do not have this, shake the pre batched ingredients vigorously over ice to get the drink frothed up. Strain into a martini glass and Garnish with a skewered blackberry and vanilla dust.
