50ml oil

450g minced lamb

1 cinnamon stick

3 star anise

10g ground cumin

2 cloves sliced garlic

50mm piece ginger, cut into matchsticks

3 sliced spring onions

5g chilli flakes

4 stalks celery, chopped

60ml rice wine

60ml soy

20ml black vinegar

15g honey

serve with sticky rice, sesame seeds and chopped spring onions


1. Heat the oil in a wok, stir-fry the lamb, cinnamon and star anise for about 8 minutes til cooked, remove, but keep the lamb fat in the wok.

2. Add the ginger, garlic, onion, celery and cook until soft cook for 2 minutes.

3. Add celery, cook 1 minute more.

4. Add everything else (inc lamb) simmer 5-8 minutes.

5. Serve with the rice etc.
