12 Chinese pancakes, heated

250g shredded oyster mushrooms

75g flour

75g Chinese 5 spice

Tsp chilli flakes

Salt and pepper

6 spring onions, shredded

Half cucumber, deseeded and cut into thin half moons

Handful chopped coriander

Juice and zest 1 lime


250g plum sauce (jar)

100g finely chopped plums

tsp rice vinegar

splash of water


1. Mix the flour, 5spice, chilli, salt. Add mushrooms, coat well, shake off excess then deep fry in small batches for about 5mins until crispy.

2. Mix the cucumber, onions etc.

3. Sauce - Combine plum sauce with plums and vinegar a little water.

4. To serve – spread sauce on a pancake, add mushrooms and salad, roll up.
