Ingredients

1kg green beans (no need to trim the tail) blanched and cooled

50ml olive oil

30g butter

5 thyme sprigs

30g flour

4 cloves sliced garlic

75g finely grated parmesan

225ml cream

300ml milk

200g caramelized onions

125g brioche crumbs, mixed with 5 thyme sprigs sprinkled, and 50g Parmesan

Method

1. Melt the butter, add flour and cook for 3 mins

2. Gradually add cream and milk. Cook for 5 minutes, stirring all the time

3. Add parmesan

4. Put the beans and onions in a dish. Spoon over the sauce

5. Add the crumb. Bake at 180°c for 20 minutes
