Ingredients

For the pancakes

2 finely grated courgettes

1 tsp chilli flakes

1 tsp smoked paprika

2 chopped spring onions

25g chopped mint

approx. 200g gram flour

approx. 50ml water

For the salsa

200g chopped cherry toms

1 diced avocado

1 chopped chilli

half diced cucumber

juice and zest 2 limes

handful chopped coriander

Garnish with finely crumbled feta

Method

1. Put the pancake ingredients in a bowl, add the flour, then just enough water to make a thick batter

2. Spoon flattened spoonfuls into a hot frying pan, cook for 3 minutes each side

3. To make the salsa, simply mix all ingredients together

4. Serve with feta
