Bloody Mary


For the mix

4 plum tomatoes, score & blanch the tomatoes then peel and core.

1l tomato juice

100ml fresh lemon juice

4tsp caster sugar

2tsp grenadine

150 Shiraz wine

1 tsp smoked salt

½ tsp fine pepper

½ tsp celery salt

2 level tsp horseradish

90ml Worcester sauce

10ml Tabasco

2 tsp spice mix

Add all to blender, blitz until smooth

For the spice mix

2tbsp Smoked Paprika

1tbsp Regular paprika

2tsp hot chilli powder

1tsp mild chilli powder

2tsp garlic powder

1/2 tsp cumin powder

1/4 tsp cinnamon powder

1/2 tsp dried oregano

Mix well and store in an airtight jar. It should have a smoky barbecue like aroma, and tickle but not burn if you taste it. If you overspice it then add more smoked paprika and a dash of cumin to bring it back into balance.


25 or 50ml Vodka (Good silver tequila also works well, as does a light gin), Fill glass with ice and top with bloody mary mix, stir. Then garnish with pepper, a lemon wheel, celery stick and 1/3 crispy bacon slice

50ml D.O.M. Benedictine liqueur

20ml Fresh lime juice

Top Tonic Water


Build over ice in a tall glass, garnish with thin lime wheels

Hugo Spritz


20ml elderflower liqueur

20ml elderflower cordial

2 lime wedges

4 mint leaves

splash soda water

top with Prosecco


Over ice in a large wine glass, squeeze and discard lime wedges, clap 4 mint leaves and add to glass, add elderflower, a healthy splash of soda and top with prosecco, stir gently and garnish with a large mint sprig. Can also be multiplied by 4 and made in a large 1.5L jug for sharing.
