Ingredients
500g clams
300g cherry tomatoes
half finely sliced red onion
3 cloves sliced garlic
5g chilli flakes
75ml extra virgin olive oil
75ml white wine
400g butter beans
about 8 basil leaves
chopped parsley
zest & juice 1 lemon
200g mayo
3 crushed cloves garlic
Crusty bread
Method
1. Gently fry the onion and garlic
2. Add the toms, clams, wine, chilli, oil
3. Put a lid on and cook 2 minutes
4. Add the beans, cook 3-4 minutes more
5. Finally add the herbs and lemon
6. Mix the garlic and mayo
7. Serve clams with bread and mayo
