225ml water

250g full fat mayo

tsp vanilla

120g flour

120g sugar

50g cocoa

2 tsp baking powder

Caramel icing

125g soft dark brown sugar

60g butter

30ml cream

200g sifted icing sugar


1. Cake – beat the water, mayo and vanilla

2. In a separate bowl, mix the flour etc

3. Combine

4. Spoon into a greased, lined 20 cm square tin

5. Bake at 180C for approx. 35 minutes. Cool

6. icing -boil the butter and sugar until bubbling and smooth

7. Take off the heat add the cream. Cool slightly, then beat in the sugar

8. Ice the cake and serve with fruit, cream or ice cream
