1 kg king prawns, peeled, tails on

80g butter

30g oil

4 cloves sliced garlic

2 red chillies, cut into long thin strips

juice and zest 2 limes

75ml hot sauce (like Cholulah or Franks)

chopped coriander and mint to garnish

6 slices griddled sour dough

handful toasted sesame seeds


1. Heat the oil and butter. When foaming add the chilli and garlic – cook 2 minutes

2. Add the prawns, cook for 5 minutes, stirring all the time

3. Add the lime and hot sauce

4. Serve on top of the toast with herbs and sesame
