Ingredients

450g minced pork

1 chopped red onion

2 cloves sliced garlic

1 tsp chilli flakes

4 tsp soy/tamari

1 tbsp fish sauce

1 tsp sugar

225ml chicken stock

10ml rice vinegar

50g edamame beans

400g cooked brown rice

1 cucumber, half moons, no seeds

1 tsp chilli flakes

50ml rice vinegar

6 sliced radish

25g peanuts, roasted

Serve with coriander, prawn crackers, sour cream

Method

1. Fry the pork mince til cooked through, remove

2. Gently fry the onion, garlic for 5 minutes

3. Add everything else, mix well

4. Simmer 30 minutes, uncovered

5. Mix the cucumber and salad ingredients

6. Serve in a bowl with the pork and rice and garnishes
