4 x 150g sirloin, fat removed

100g flour

3 eggs beaten with 150ml buttermilk

For the flour mix

200g flour

15g each cayenne, smoked paprika, garlic powder, oregano

oil and butter to fry

4 brioche buns

125g grated Gruyere

150ml Franks hot wing sauce (or similar)

150ml smoky bbq sauce

Serve with dill pickle and sweet potato fries


1. Baton out the steaks until very thin

2. Dip in flour, egg mix then seasoned flour

3. Shallow fry for 3 minutes each side in oil and butter, drain

4. Cut each steak in half, top with hot sauce and cheese

5. Grill for 3 minutes

6. On the base of each bun spread some bbq sauce, then steak, then sauce, then steak

7. Top the bun

8. Serve with dill pickle and sweet potato fries
