8 apricots, halved

Oil to brush

For the crumble:

125g flour

125g butter

125g demarera sugar

50g flaked, toasted almonds

350ml crème fraiche

100g honey


For the Crumble:

1. Rub it all together, except the almonds

2. Lay on a baking sheet and cook at 180c for approx. 15-20mins, Cool, break up and add the crushed almonds

For the Apricots:

3. Brush with oil and griddle for 5-6mins until charred. Flip over and griddle for a further 2minutes

4. Serve apricots, dollop of crème fraiche, crumble and drizzle with honey
