450g cauliflower florets

50ml oil

30g salt

tsp cumin seeds


125g flour

1 egg

125ml ice cold water

tbs sesame seeds


125g mayo

1 tbs curry paste

50ml sour cream

oil to deep fry


1. Toss the florets in oil, salt and cumin, then roast at 200C for approximately 8 minutes

2. Batter – beat the egg and water, add salt, seeds

3. Put the flour in a bowl, make a well in the centre, add the liquid

4. Dip the florets in the batter and deep fry for 3-4 minutes at 180C

5. Mayo – mix the mayo, sour cream and curry paste.

6. Serve a dollop of mayo in the middle of a bowl and arrange the cauliflower around
