Ingredients

Bhajis –

200g gram flour

2 tbsp rice flour

3 tsp coriander powder

2 tsp cumin powder

3 garlic cloves pureed

2 finely chopped green chilli - banana or finger-de seeded

2/3 tsp salt to taste

sparkling water left to go just any bit flat

2 tsp ajwain seeds

1 tsp fresh thyme

1 tbsp poppy seeds

1 large white onion finely sliced

9 stalks tenderstem broccoli - chopped into 4 cm lengths ish

large handful of coriander leaves and stalks finely chopped

lemon juice to garnish

Garnish with coriander

Method –

1. For the Bhajis - Combine all the ingredients except the onions and broc in a large bowl and add 300 ml of the sparkling water- add it slowly and-mix until you get a nice thick pancake batter consistency

2. pour the mix into a big bow that contains the onions and broc- combine thoroughly and spoon small batches into the deep fat fryer-

3. fry for around 4 minutes or until golden brown

4. For the dip – whilst the Bhajis are cooking mix all the dip ingredients together in a bowl.

5. remove with slotted spoon serve with dip
