Ingredients

SAUCE

125g honey

150g condensed milk

425ml cream

tsp sea salt

PASTRY

240g flour

100g butter – chopped

25g caster sugar

1 egg

milk to bind if needed

FILLING

300g blueberries

20g sugar

15g flour

tsp vanilla

175g full fat cream cheese

egg wash

more sugar

Method

1. Sauce - boil the honey for 3 minutes, stirring all the time

2. add the condensed milk and cream, simmer 8 minutes

3. take off heat, stir in sea salt

4. pastry – pulse to combine. Wrap in cling film, chill 30 minutes.

5. roll out to about 1/8” thick, then cut out approx. 16 x 100mm circles

6. filling – toss the flour, sugar, vanill and blueberries together

7. spread a little cream cheese on each of the circles (don’t go to the edge)

8. add a spoonful of blueberry mix

9. fold over, seal with a fork

10. brush with egg wash, sprinkle on sugar. Bake at 180C for about 18 minutes

11. serve warm with the honey sauce
