Ingredients
100g sugar
2 tsp baking powder
half tsp bicarb
pinch sea salt
375g flour
125g butter
1 egg
150ml sour cream
150ml cream
100g blueberries
100g very crispy smoked streaky bacon, chopped
Glaze with extra cream and 2 tbsp demerara sugar
serve hot with butter and peanut butter
method
1. Mix the flour, bicarb, baking powder, salt and sugar
2. Rub in the butter
3. Add the fruit and the bacon
4. In a small bowl, mix the eggs sour cream and cream. Then gradually add in to the flour mix to make a dough
5. Form it in to a round, large scone.
6. Cut into 8 wedges brush with cream and sprinkle on demarer sugar
7. Bake at 180C for 25-30 minutes
8. Cool just a bit, then spread with butter and peanut butter
